Steps of cultivation
- Prepare growth medium and generously moisten the surface

Storage studies indicate that beetroot microgreens maintain freshness and sensory attributes for 7.7 ± 0.1 days when stored in LDPE zip-lock bags at 4°C, which is significantly longer than storage in aluminum containers at the same temperature . The shelf life difference highlights the importance of appropriate packaging for commercial distribution. Rote Bete microgreens contain concentrated levels of betalains, the pigments responsible for their characteristic red color, which possess antioxidant properties. Harvest when cotyledons are fully expanded but before true leaves emerge, cutting approximately 1 cm above the growing medium.
